I have good friends. Friends who make me die laughing on the regular and friends who propose specific sweets for me to make. When someone mentioned peppermint patties, I was sold. I once bought a box of peppermint patties from Costco and ate one every day for more than six months. I never got tired of them.
They aren't difficult to make but they are a bit of a hassle, as in I completely destroyed my mom's kitchen in the process. They were totally worth it. (Right, Mom?) This recipe is super clear and has lots of helpful visual aids. Peppermint patties freeze like a dream, so you can make a huge batch and hoard them for as long as you please.

as soon as i moved into my apartment, i redesignated my butter drawer as my peppermint patties drawer. best decision ever. (also, anyone who knows about the drawer barely pauses to say hi when they come in the door, and head straight to the patties!)

I've been wanting to make these for ever but I can't seem to find peppermint extract anywhere! It's driving me crazy as they just look sooooooo good! :)
