
Peanut butter cookies have always been my cookie of choice. They are unsuspectingly brilliant; the quietly confident cousin of the arrogant chocolate chip cookie. It's about time they get the respect they deserve.
I'm partial to my mom's homemade peanut butter cookies (of course) which are flourless, allowing the peanut butter flavor to truly shine. Since my mom politely denies my regular requests to send baked goods to South Carolina, I recreated them myself. It was a proud moment. I may or may not have carried a bag around in my purse and handed them out to friends and strangers.


Flourless Peanut Butter Cookies (via Joy the Baker)
1 cup all-natural peanut butter
1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
1 egg
1 teaspoon baking soda
Preheat oven to 350 degrees F. Grease a baking sheet and set aside. Combine peanut butter and sugars until well combined. Add egg and baking soda and mix for another 2 minutes. Roll into bouncy-ball-sized balls and create one imprint with a fork. If you’re feeling a little crazy, add a few chocolate chunks to the middle of each cookie (I used this salted almond chocolate, also available at Whole Foods). Bake for 10 minutes, until lightly browned.

so true. i love how quietly confident the peanut butter cookie is. i always fall for the trap of the arrogant chocolate chip cookie but next time i think ill bake the peanut butters because once again..you have made them look so.damn.good!

I use the same recipe, minus the baking soda. Everyone says they are the best PB cookies they've ever had. Simple is usually the best!
I make these same cookies but I use almond butter. I've been wanting to try them with peanut butter though. Good to know they work and they look delicious! Try with almond butter sometime and let me know what you think :)

We make these at the cafe I work at, but the secret ingredient is to use crunchy adams peanut butter (or really anything a bit thicker) and 1 tablespoon of maple syrup (true maple syrup). Great job on these cookies, I'd be proud too!
