
The moment I saw a photo of Nanaimo Bars, I knew I had to make them. I had no idea what they tasted like or what the process entailed, but something about them tugged at my heart strings. They are just so stinkin cute, and as it turns out, also delicious.
All three layers -- the coconut pecan crust, vanilla cream cheese filling, and dark chocolate ganache -- work so well together, it's almost unfair. My self-control has consequently taken a turn for the worse.

nanaimo bars are one of my biggest weaknesses... their namesake city (where they were invented) is on the island where i grew up, and they are everywhere on vancouver island! they are so much a part of my life that i couldn't believe you're only just learning about them now :)
and i have to let you in on a little secret... if you are loving nanaimo bars, i suggest you try to look up a recipe for "kleinburg bars" - i believe they are also a vancouver island invention (possibly at the little cafe of my university in victoria), with a peanut butter cream taking the place of the regular filling. they are unbelievably addicting, and the main reason i gained weight in university. yummmm!!

My college cafeteria recently served these bars. Amazing! Since then, I always sneak at least three into my bag!

sometimes when i make desserts that i have no self control over.. i'll hide them high up in the cabinet so i can't reach. THESE would be one of those desserts. no doubt.

I've got to try these! I at first thought they were some chocolate and peanut butter concoction but learning they've got nuts and coconut in them has me all the more intrigued! They are quite adorable and definitely are a dessert I'm going to be testing out for myself soon!

LOVE this post. I grew up 45 minutes north of Nanaimo. I only tried to make them once - when I was about 14 - and the yellow ran right out when you cut them. Maybe I'll try again!

Super delicious and tasty Kleinburg bar recipe as previously mentioned! Enjoy!
Ingredients :
Kleinburg Bars
First Layer
1/3-cup brown sugar (packed)
3 tbsp corn syrup
2/3-cup peanut butter
2 tbsp melted butter
1 tsp vanilla
2 cups Rice Crispies
Second Layer
½ cup unsalted butter
2 Tbsp. and 2 Tsp. cream
2 Tbsp. vanilla custard powder
2 cups icing sugar
Third Layer
4 squares semi-sweet chocolate (1 oz. each)
2 Tbsp. unsalted butter
How to Prepare :
First Layer:
Combine sugar, corn syrup, peanut butter, butter, and vanilla. Mix well, add cereal and mix until cereal is
combined well.
Bake at 375 F for 5 minutes. Refrigerate at least one hour until set.
Second Layer:
Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom
layer.
Third Layer:
Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer
and chill in refrigerator.
