Caramel salted brownies are my life. What do I do when I have a good day? Bake caramel salted brownies. What do I do when I have a bad day? Bake caramel salted brownies. What do I do when I can't sleep in the middle of the night? Bake caramel salted brownies. You get the picture.

I still like to use the recipe I posted a few months ago (especially for vegan friends), but it can be a bit temperamental since I always just improvised with the caramel. After experimenting with dozens of recipes, I've found that this King Arthur fudge brownie recipe plus this Smitten Kitchen buttery caramel sauce is a fail-proof, mind-blowing, perfect combination.

The key to these brownies is taking them out of the oven 5-10 minutes before the recipe says they are done. In order to achieve the fudgey consistency, they have to cool and refrigerate for at least a couple hours. If not, you'll just be eating warm brownie batter (if you decide to do this, I am in no place to pass judgement).

Don't take these brownies on unless you are prepared to become addicted. Last night I received a text from my friend that said, "Please don't bring brownies tomorrow. We are all getting fat." Then immediately following, "Kidding, we all want them!!!" These things are no joke.

I can't explain how obsessed my mom and I have become with these, but I think you probably know. The weekends I'm not making them, my mom is. I have a question... My mom and I are going to make these while I'm home. Do you let the brownies cool before putting the caramel sauce on? Or do you pour the sauce on when it's right out of the oven? Thanks!!

I made these the other night and you are right, amazing combo.

but, I have the exact same questions as above:
when do you put the caramel syrup on? Is it baked with the brownies or poured on after.
And I think when I looked at the previous recipe, you actually baked a layer of caramel between the brownies? is that the case for these as well?

Put the caramel on the batter before baking. I usually do a layer in the middle and a layer on top, because the Smitten Kitchen caramel recipe yields enough to do that! If you put it all on top, the brownies don't bake quite as evenly.

For something completely different, you COULD pour the sauce on after (since the caramel sauce is amazing on its own) for more of a brownie sundae type thing!

I assumed yours looked baked, but couldn't tell.

I did end up putting it on top after I baked it and it definitely sat on it and didn't sink in like it looks when you bake it, but it was still tasty!
Next time I'll definitely bake it.

I love brownies and have had many, many successful and failed attempts at getting the right sized pan, right recipe etc, etc. I thought I had found a great one...until I tried this one! Oh boy! We are having a huge end of summer Birthday BBQ for my little guy on labor day. I am always trying to whip up some new chocolatey treat to share with friends. This is certainly it. They may all hate me at the end cause I would have started a new addiction (lasted one was salted chocolate toffee squares), but that's OK. These look worth it!
