Chocolate Coconut Ice Cream Sandwiches

1. Bake cookies (we used this recipe) and let cool completely. Don't want soggy cookies!
2. Put ice cream (we used vanilla) in mixer and add unsweetened coconut flakes.
3. Use spatula to scoop enough ice cream onto a cookie to create a thin layer between both cookies.
4. Freeze for a few hours to let the ice cream harden and enjoy!
Such a simple process and the possibilities are endless. Next endeavor: dark chocolate chunk cookies with mint ice cream (and real mint leaves).

you girls are so creative! i would have just bought some premade chocolate chip cookie dough and scooped ice cream on it. this looks way better!

I just made Andre fall to the ground when I showed him these pictures. Ice Cream sandwiches are his FAVORITE. I'm going to have to make some for him!!
