on saturday i had the urge to bake and i've been eyeing this carrot cake recipe for a while. the ginger in the cake and the maple cream cheese icing finally drew me in. when i was younger, carrot cake was the only cake i would eat (shocker, i know). it was the cake i had at my first birthday and i guess nothing else lived up to it in my humble one-year-old opinion. it's a classic and i still love it any day of the week.

What a beautiful cake! I'm a big fan of carrot cake, too, although when I was little, I HATED it. I thought it was going to taste like carrots.
