a cozy saturday morning bake-a-thon.





since i didn't have to work on saturday, i was ecstatic about the dark, rainy day - perfect for staying inside and baking. ever since i saw this lucky girl on an episode of barefoot contessa, i have been reading her blog religiously. apart from being seriously talented in the kitchen, tons of her recipes happen to be vegan! they are also super simple and only take a few minutes.

i've always loved banana bread because my mom's banana bread (with chocolate chips and coconut) was the way i learned to like bananas when i was little.

banana bread muffins

1/4 cup plus 2 tablespoons canola oil
1/2 cup sugar
2 large very ripe bananas
1 egg
3/4 cup flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt


preheat oven to 350 degrees. combine the oil, sugar, egg, and bananas. fold in dry ingredients. pour into small loaf pan or 10-12 muffin cups. bake for about 15 minutes, or until they look golden brown.

brown sugar shortbread
1 cup plus 2 tablespoons flour
1/8 teaspoon salt
1/4 cup brown sugar
1 stick butter, at cold room temperature


preheat oven to 350 degrees. combine the flour, sugar and salt. cut the cold butter into small pieces and fold it into the dough with your hands. press the dough into a round baking pan and prick in a few places with a fork. bake for 10-12 minutes. (serve with a soy cappuccino and a sunny terrace).

I'll have to try this banana bread muffin recipe. Last time I tried to make muffins, they turned out "rubbery" :o)

This looks delish! If you're looking to experiment with banana bread, check out Martha Stewart's banana bread recipe. It has sour cream in it, which sounds disgusting, but actually makes the bread so rich and creamy, it melts in your mouth. Just a thought!
